The guardian of the immortelle
Here is the first of the cocktails created for us by Jeremy Lauilhé, awarded the title of Meilleur Ouvrier de France 2023 in the bartender category. The challenge we set for our champion of precision and excellence was to invent a cocktail that is extremely simple to make, with readily available ingredients, and that brings out the immortelle aromas of Melifera.
Challenge met: the Immortelle Mellona is a very straightforward cocktail that anyone can prepare in their kitchen and enjoy while comfortably seated on their terrace. It resembles a slightly reimagined Gin and Tonic with a delightful complexity. The grapefruit introduces a pleasing bitterness, the honey syrup adds a touch of indulgence, and the elderflower enhances the floral notes of Melifera.

Ingredients
40 ml Melifera Gin
30 ml grapefruit juice
10 ml honey syrup
Elderflower tonic
Garnish : Grapefruit wedge
How to make
- Generously fill your glass with ice cubes
- Directly into the glass, pour 40 ml of Melifera Gin, 30 ml of fresh grapefruit juice, and 10 ml of honey syrup
- Top up with elderflower tonic
- Gently stir and garnish
Our Little Anecdote
Mindful of using products that hold meaning and align with the narrative of the spirits he crafts, Jeremy incorporated honey syrup into his recipe. This resonates with Melifera’s commitment to the protection of the black bee on Oleron.
Furthermore, he selected honey from our favorite Oleron-based beekeeper, Emmanuel Rathier. It was Emmanuel who set up his beehives in the Melifera Garden. Although this black bee honey might not necessarily impart distinctiveness to the product, it brings us immense joy. It signifies that our black bees are thriving and producing lovely honey.
Tips for Making Honey Syrup
Our MOF (Meilleur Ouvrier de France) is here to provide you with his tips for crafting honey syrup. Truthfully, it’s quite straightforward.
All you need to do is combine 50g of water (slightly warm for faster dissolution) and 50g of liquid honey in a container and mix until fully dissolved.
Remember to store the mixture in a glass bottle in the refrigerator. Simple, isn’t it?
